Ingredients

  • 1 egg
  • 1 tbsp water
  • 1 lb frozen puff pastry (2 sheets), thawed according to package directions
  • 1/2 cup Divina Fig Spread
  • 4 oz brie cheese
  • 2 tsp fresh thyme leaves

Directions

Step 1

Preheat the oven to 350°F. Line 2 sheet pans with parchment paper. In a small bowl, whisk the egg with water. Set aside.

Step 2

Unroll both sheets of puff pastry on a lightly floured surface. Roll each sheet into a 9""×12'' rectangle. Evenly spread 1/4 cup of fig preserves onto each sheet of puff pastry. Crumble 2 oz of brie and 1 tsp of thyme over the top of each puff pastry sheet.

Step 3

Next, form the cookies. Starting with the long side towards you, fold each side of the puff pastry halfway towards the middle. Then, fold the sides again until they meet in the middle. Fold one half over the other (like a book). You should have one roll with six layers.

Step 4

Repeat this fold with the other sheet of puff pastry. Refrigerate the rolls for about 20 minutes.

Step 5

Trim the ends of each roll. Cut each roll into 16 1/2-inch slices (32 palmiers total). Arrange about 2 inches apart on the parchment-lined sheet pans. Brush with the egg wash.

Step 6

Bake on the middle rack of your oven for 22–25 minutes until golden brown, turning the pan halfway through baking. Serve immediately.

Step 7

Enjoy during the holidays on a board or alongside an array of festive desserts—or year-round with your choice of apps and sides!
