Roasted Peach Scone Recipe

Ingredients

Roasted Peaches

  • 2 peaches
  • 3 tbsp melted butter
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom (optional)
  • 1/4 cup brown sugar

Scones

  • 3 1/2 cups flour
  • 1/2 cup brown sugar
  • 1/2 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cardamom
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter
  • 1/2 cup buttermilk
  • 1 tbsp vanilla extract
  • 2 tbsp Torani Peach Syrup (optional)
  • 2 tbsp heavy cream

Glaze

  • 1 cup powdered sugar
  • 1 tbsp peach syrup (optional)
  • 2 tbsp milk

Directions

Step 1

Preheat oven to 400°F.

Step 2

Cut peaches in half and place on a parchment-lined baking sheet.

Step 3

Add melted butter, maple syrup, cinnamon, nutmeg and cardamom (if using) to a bowl and mix.

Step 4

Brush peaches with mixture and sprinkle brown sugar on top. Roast for 30 minutes.

Step 5

Once peaches have cooled, slice into chunks and set aside.

Step 6

In a large mixing bowl, mix flour, brown sugar, cinnamon, nutmeg, cardamom, baking powder and salt.

Step 7

Grate butter into the flour mixture and press butter and flour together until pea-sized morsels begin to form.

Step 8

In a small bowl, mix buttermilk, vanilla extract and peach syrup. Pour into flour mixture and mix until a dough forms.

Step 9

Add half of the diced roasted peaches and continue to mix. Place dough in refrigerator for 15 minutes.

Step 10

Add dough to a floured work surface and use a dough roller to shape into a circle, about 1 inch thick. Slice into 8 pieces and place on baking sheet. Return to refrigerator for 30 minutes.

Step 11

Brush scones with heavy cream and bake for 18 to 22 minutes, until scones are golden brown.

Step 12

Drizzle glaze on top of scones and top with remaining roasted peaches.
